NOTE: Excuse the painted fingernails… hahaha! It’s my sister’s fault.. just be glad they’re not pink! The word that I couldn’t remember was “Nucleation” en.wikipedia.org en.wikipedia.org en.wikipedia.org basically, the pop from the metal disc creates a starting point for the new bonds to start being made and cause a chain reaction throughout the solution. technically the solution inside the pouch is “supercooled”, and the crystallisation brings it up to temperature, and into its solid, or “Frozen” state.
